In a recent trip to the historic Trece Martires in Cavite, I was able to eat in a restaurant replica of Emilio Aguinaldo’s mansion in Kawit – the Republic of Cavite.

Located along City Hall Road in San Agustin, this unassuming place is home to various Filipino dishes cooked Cavitenos-style.
